I’ve never done a post like this before, but I decided that it would be fun to share with you all what I’ve been eating lately. This goes for breakfast, snacks, lunch or dinner, all of it!
I love seeing people’s What I Ate Wednesday posts, but I’ve never done one. I feel like depending on the day posting what I ate could be pretty boring. So I decided to accumulate a few days worth of food to share!
I love food, and I love cooking. I love buying berries and washing the fruit and putting them in cute bowls to snack on later. It is SO satisfying looking in my fridge and seeing a bunch of color and having a ton of options to choose from.
These aren’t all that I’ve eaten the last week, they are just what I’ve remembered to take a photo of. Or you know, there were a few meals that looked awful in the picture I took, so I’d rather not show you something that looks super awful.
Trust me, I’m saving you. I took one photo of rice and veggies that tasted amazing, but looked like vomit.
This sandwich. Oh my gosh! This veggie sandwich was heaven in every bite. It had Havarti cheese, mayo, sub sauce, lettuce, red onion, green peppers, roasted red peppers, cucumber, and shredded carrot.
I could eat one of these every day, and it is SO hard to not walk across the road and get one, since I am now having a mega craving for one.
This is one of my favorite snacks. Berries are the best, and I used to hate pineapple, but suddenly I love it. I want it every day. This combo is really delicious and full of antioxidants.
A big old plate of roasted veggies! This is my go to meal. It takes like 40 minutes to make. My favorite veggies to roast together are mini red potatoes, carrot, broccoli, and asparagus. But really, just throw in and roast your favorites! It is so healthy, filling and delicious!
Pasta shells with a rose sauce. Pasta will always be my favorite type of meal, and I decided this time to change things up with some shells. I love how versatile pasta dishes are!
Green grapes are so delicious and healthy, and can be enjoyed both fresh or frozen. I admit, I regularly snack on both.
And have no plans to stop!
Scott and I had a friend over for dinner not long ago. I cooked them up some chicken, and I had a veggie burger wrapped in lettuce. I decided why buy buns for one burger?
We also had corn on the cob and roasted mini red potatoes.
Pretty much every other week Scott and I get a burrito from Mucho Burrito. Not the healthiest, but pretty damn good for fast food. I always get the veggie burrito and Scott gets a meat one. We both always get a small though, because man they are huge! So filling and delicious.
I used to be completely obsessed with Special K cereal. Then I decided that it was too expensive and stopped eating it. But after having a mega craving, I went and got some! I like the red berries flavor and eat it for breakfast with original almond milk.
So many roasted veggies!!!
