I love switching up my lunches every day. It’s easy to get into a “lunch rut” and eat the same boring sandwich day after day. Growing up I used to eat a ham wrap for lunch every lunch time. Now, if possible, I like to do something different every day so I don’t find lunch time boring. I love to make veggie stir fry, salads, wraps. The other day I had a craving for quinoa. So a simple quinoa lunch it was!
- 3/4 cup uncooked quinoa
- 1 cup veggies (any that you wish)
- 1 tbsp sesame seeds
- 1 tbsp nutritional yeast
- 1 tbsp soya sauce
- 1 tbsp hot sauce (I used sriracha)
- 1 tsp olive oil
- 1 tsp cumin
- salt to taste
Rinse uncooked quinoa under warm water for 3 minutes.
Cook quinoa. To cook, put quinoa in a pot with a lid. Add double the water to ratio of quinoa. Bring to a boil. Once boiling, cover and simmer for 15 minutes.
Once quinoa is cooked, in a pan, heat olive oil.
Add cup of veggies. I used peas and carrots.
Add in cooked quinoa.
Cook veggies and quinoa together for about five minutes, so that veggies are not hard.
Once cooked, add in hot sauce, soya sauce, cumin, salt and sesame seeds.
Mix it all together.
Plate food, and add nutritional yeast on top.
This is such a quick and simple lunch, not to mention super healthy!
Quinoa is delicious and a super food, so adding it into your lunches keeps you full, gives you loads of protein, and is a healthy alternative to rice.
I love adding nutritional yeast to my dishes for some extra vitamins (hello B-12!) and flavor. It has a nutty taste and is really yummy!
