Growing up, my school lunches always consisted of a sandwich and a few snacks. I was never too fond of sandwiches. I disliked eating white bread and how soft and mushy it felt in my mouth, so as soon as I was able to I began eating wraps for lunch. The tortilla never mushed in my mouth and I learned that maybe it wasn’t sandwiches I didn’t like, it was just the type of bread.
Now when I eat sandwiches I toast the bread if I’m eating a sandwich on sliced bread, but otherwise, give me a bun!
When I switched to a vegetarian diet I thought that my sandwich days were over.
What was the point of eating a sandwich with just a few veggies on it, surely I would still be hungry afterwards?
I needn’t have worried. Veggies are very filling and I love making my veggie sandwich as big and colorful as I can! There are so many different ways to make a veggie sandwich, but here is my go to. Trust me, it’s delicious!
The Ultimate Veggie Sandwich
- A Bun
- Shredded carrots
- Red Onion
- Sliced cucumber
- Sliced red pepper
- Italian Dressing
- (optional) cheese
I wrote the ingredients in the order that I layer my sandwich. When I do add cheese that’s always on the bottom though.
Use as much or as little of each veggie as you would like but may I suggest piling them on!
The crunch of the sandwich is so satisfying. This is a healthy and delicious lunch or dinner.
