Making a big pot of chili to eat for the next few meals is one of my favorite things to do during the week, and something I find myself doing at least once a month.
Chili is so hearty and delicious, and even though there are so many different ways to make it, I do have my go to recipe.
The thing with making a big pot of chili is that there are tons of leftovers, and it can sometimes get a bit boring eating the same meal over and over again. Am I right?!
So this past week I set out to try new things with my chili with the ingredients that I had laying around the house.
This meant I wasn’t going to go to the grocery store to buy new things to make the chili pretty (though I wanted to!) but I just wanted to come up with something new with my household staples.
The Chili Rice Bowl
I always have a bag of corn in the freezer and rice in the cupboard. Whenever I can I love to make a rice bowl.
For this recipe all I did was heat up some chili, make a 3/4 cup of rice, and boil up some corn and brussels sprouts. The brussels sprouts are hiding under all of that corn!
This meal was quick and easy to make, and was so delicious!
Could I make a chili meal without hot sauce and nutritional yeast?
Over Sweet Potatoes
By the second re-imagined meal I only had a bit of leftovers left, so I decided to bake a sweet potato and pour some chili over top.
I love sweet potatoes so I knew this recipe would taste delicious.
Of course, as per usual, hot sauce and nutritional yeast on top were needed!
Seriously, how good does that sweet potato look?!
By now we were out of chili.
If I had more left over then there are a few more meals I would have liked to make.
- Quinoa and spinach mixed in
- Over top of spinach
- Over top of a salad with romaine lettuce, cucumbers and bell peppers
- Chili mac and cheese
There is loads that you can do with the leftovers
