Now that the weather is finally cooling down (I hope I didn’t just jinx it!) I am so excited about all of the healthy autumn comfort foods I’m going to make, but I decided to share my favorite summer eats today. I currently have a bean chili on the stove for my lunches this week. Yum! During the summer months I’m hot and don’t feel like being in the kitchen much. Occasionally I’ll feel inspired and whip something up, but typically, nah! I’d just prefer a raw salad to cool me down.
I thought that sharing with you my favorite summer eats would be fun, and maybe inspire me for next summer. Although hopefully I don’t see the summer heat for a looooooooonngg time again!
Mangoes. Seriously, this summer was my first time eating a mango and I LOVED it. I ate so many mangoes this summer and wish that they were in season year round. They are so delicious. They go great in smoothies too! Last night I ate the biggest and juiciest mango that I’ve ever eaten and it was perfect. Insert all of the heart eye emoji’s here.
These veggie burgers. When I said that these are the best veggie burgers that you will ever eat I wasn’t lying. These are so good. They are healthy, FILLING, and delicious! I’ve been craving them nonstop since I made them, so I know what I’ll be making again soon.
Raw veggies and hummus for lunches. So simple, but so satiating. I would just cut up cucumber, peppers, carrots, and whatever else I had in the fridge at the time. Usually a few Triscuits would end up on the plate to. It is a filling lunch and really satisfying. You feel like a kid again with finger foods.
Any kind of veggie sandwich. These were made for my lunches a lot this summer. I like wraps, but I get irritated making them because for some reason they always rip on me. So sandwiches are a savior!
Lastly, any raw salads. I despise the heat. I feel uninspired, lazy and grumpy. Thankfully raw salads are quick to make, easy, yummy, customizable, and nice and cool!
These meals were all so simple, yet so satisfying, which is a total win in my books! But I am so excited that it’s almost time for autumn foods!
