My First Blog Event At Pink Elephant Thai

Hi guys! I’ve been having a bit of writers block these past few days and it has been driving me nuts. Normally I have to pull myself away from my laptop because there is so much I want to write and I always have posts scheduled for the upcoming week. Not this week! I’m not sure what’s been going on with my mind, but I’m sure this writers block will go away soon. I figured in the mean time I would share something really exciting with you. Last week I went to my first blog event! It was at Pink Elephant Thai, and was held by the Travel Corporation Canada and the Tourism Authority of Thailand. We ate loads of insanely delicious Thai food (vegan options!) and had a presentation from Canadian ‘Foodstagrammer’ Dennis Prescott.

This event was SO fun. I was the first one there (why does this always happen to me) and ended up sitting with some incredible people. People that could be found there were other travel bloggers, travel and tourism workers, and food photographers.

I was mostly excited to see the presentation from Dennis Prescott. If you love checking out food on Instagram then chances are you’ve seen his work. He is a self taught cook and food photographer, and can be found @dennistheprescott.

He told us his story and explained to us how when taking food photos to make sure we are telling a story. I’m guilty of just snapping a boring photo of my food before it gets cold, but seeing his food photos makes me want to try harder. Hopefully I can use some of the skills he taught us and make the photos on this blog better with my recipes!

Each guest was given a welcome drink (Pina Colada) and two free drink tickets. I had two Corona’s (I write as I’m sitting in my favorite Corona shorts). There was a small fruit buffet, appetizers being brought around and a family style dinner served at all of the tables.

The spring rolls and tofu nuggets were my favorite of the appetizers. I like tofu, but all of the tofu I ate at the event was just sooooooo good that now I want to try to recreate some of these recipes!

For dinner they had three meat dishes and three vegan dishes.

The meat dishes were Green curry chicken, Fish fillet with a pineapple sauce, and BBQ beef short ribs.

The vegan options were Cashew nuts with tofu (my absolute fave dish of the night!), Sauteed mixed veggies with a black bean sauce, and Pineapple fried rice with tofu.

For dessert we were spoiled with mango sticky rice and deep fried banana and ice cream.

They first brought out the pineapple. I didn’t realize that this dish was vegan at first. When I finally tried it though, oh man, yum! Being served in a pineapple was not only pretty, but tasted very fresh.

The mixed veggies were good, but the star of the night had to be the Cashew nuts with tofu! I didn’t eat the nuts (I hate the taste/feel of nuts in my teeth) but the veggies, sauce and tofu were all incredible.

I had to stop myself from eating it all.

I wasn’t crazy about the mango sticky rice (please don’t hate me!) but the deep fried banana was lovely.

Overall it was such a fun night! I was really nervous to go since I would be rushing from work and it was my first blogger event, but I’m so glad I went. The people I met were awesome, the food was delicious, and I learned a lot.

Also, in our gift bags Dennis Prescott gave us all a signed copy of his cookbook Eat Delicious. I have read the entire book now and there are so many recipes I want to try. Also, every recipe comes paired with one of his beautiful food photos.

  1. Ohh how delicious food! 😀 Getting hungry here haha.. Sounds like you had an inspirational event. Sometimes you just simply need couple days off to have a little break from everything to feel inspired again. Have a great day!
