Homemade Peanut Butter Banana Baked Oatmeal was last updated on November 7th, 2023.

I am a HUGE fan of oatmeal. It is my favorite thing to make for breakfast on a busy work morning. I love how warming the oatmeal is in my tummy, how filling it is, and how versatile it is. Seriously, you can make so many different things with oats. Even my favorite vegan “chick’n” has an oat crust. So good!
Lately I have been trying to play around with different recipes to make a new breakfast for myself. I wanted to try to make a baked oatmeal that I could make in bulk one day, and then eat for the rest of the week.
The recipe that I came up with is delicious, SO simple to make, and is great to freeze as well!
I have been trying to eat less dairy lately as I often find myself very bloated afterwards. So this recipe is also vegan! It can also be made gluten free, you just have to verify that the oats you chose are gluten free.
My favorite ingredients to add into my oatmeal bowls are cinnamon, banana and peanut butter, so of course I had to add those in.
Peanut Butter Banana Baked Oatmeal
- 4 Cups Oats
- 2 Tsp Cinnamon
- 2 Mashed Bananas
- 1/2 Cup Peanut Butter (Smooth or Crunchy, I use smooth)
- 1 Tsp Baking Powder
- 1/2 Cup Maple Syrup
- 1/2 Tsp Table Salt
- 2 1/3 Cup Vanilla Almond Milk (Any Non Dairy Milk Works!)
- 1/4 Cup Brown Sugar
- Pre-heat oven to 375 degrees F.
- Combine all ingredients into a large mixing bowl, mix well.
- Line 8″X 8″ baking pan with parchment paper or cooking spray.
- Poor oatmeal batter into pan.
- Bake for 20 minutes or until cooked through.
And there you have it!
This is such a simple recipe, it hardly takes any time at all to make. You can also make this into a loaf or into muffins. The first time I made it I couldn’t find my 8″ X 8″ pan so I made it in a loaf pan. It turned out wonderful!
As you can see this recipe works great with many diets, and is so healthy. And very filling! One slice and I’m full up until lunch, no problem.
I’m so excited to make this as often as I can. Something that I ended up doing was melting some additional peanut butter to pour on top. Yum!

I’m not usually very keen on peanut butter but this looks so yummy!
I only started liking peanut butter a few years ago. Now I love it! But it’s not for everyone.

Wow, I neve tried baked oatmeal – sounds really good! Will it work with regular milk, too, for a non vegan option?
My everyday brekkie is a huge fruit salad with lots of yoghurt and 1/2 cup of raw oatmeal. I make it in the evening and take to office in the morning. That’s one of my anchors 😀

Hmm, I know that in most recipes 1 banana can be replaced by 1/2 cup of applesauce. I wonder if this could be made with that instead?!
Yum! Normally I have regular porridge cooked on the stove or overnight oats in the summertime, but I definitely need to give this a go!
