I’m sat here having just put a fresh batch of banana bread in the oven and wanting to write a little bit. There are a few things I could write about, but the thing I want to write about most is last week’s meal prep. It was a good one 😉 I am starting to meal prep my meals now that I’m working 50 hour weeks, Monday to Friday. 50 hours may seem like a lot, but I love my job and really want to pay down my student loans as fast as possible. So, while I’m young and have the time, why not? Here is my meal prep: August 14th-18th!
I have been making the same breakfasts lately. It used to just be a banana, but then I would be hungry two hours later. I have a hard time eating right when I wake up, but I have found that a slice or two of homemade banana bread with peanut butter on top works pretty good!
I don’t feel like it’s hard to eat, it doesn’t hurt my stomach, and I stay full for a solid 4 or 5 hours after eating it. That’s not to say I don’t have snacks though!
Last week for lunches I kept it simple but satisfying.
Chicken and veggies for Scott, and homemade chili for me!
I may not eat meat but Scott does, so he usually eats the meat for lunches at work and we’ll eat vegetarian at home. So I bake him some chicken, slice it up and put it in a container with a few different veggies.
For myself, I made a big batch of chili last week, and since I could eat chili everyday I knew what my lunches would be! It is such a filling lunch and really yummy, so it’s perfect.
I usually don’t bring snacks to work. I just snack on whatever fruit isn’t being eaten by the little ones.
Last week’s meal prep was really simple, filling and delicious. The best kind I think!
