I’m the type of person who finds something she loves and sticks with it. Spaghetti has been my favorite meal for as long as I can remember. Green tea has been my favorite tea for 12 years. I drink two cups of coffee per day. So recently I thought I would try to switch things up. I wanted to try out a breakfast burrito!
This recipe is so delicious that, surprise, it is now something I eat at least twice a week for breakfast.
Filling, healthy and oh so delicious, this breakfast burrito takes about 20 minutes to make. The perfect weekend breakfast.
My Favorite Breakfast Burrito Recipe
Veggie Breakfast Burrito
A filling and delicious breakfast.
- 1 Whole Wheat Tortilla
- 2 Eggs
- 5 Mini Potatoes I always buy the tricolor mini potatoes
- 1 ounce Cheese
- 1 Tsp Turmeric
- 1 Tbsp Salsa
- Hot Sauce To Taste I use Frank's Red
- Salt and Pepper to Taste
Cut up mini potatoes into small bite size pieces (these pieces will be going into your wrap, so make them tiny).
Boil potatoes until fork tender.
Once boiled, melt butter into a pan. Cook potatoes on medium in pan until crispy.
Add in turmeric to potatoes.
Crack eggs into a bowl. Whisk, them pour egg mixture into potato pan. Cook together until eggs are scrambled and cooked with potatoes.
Salt and pepper eggs and potatoes to taste.
In another large pan on medium, warm tortilla. About 30 seconds per side.
Put tortilla on plate. Sprinkle cheese all over the tortilla.
Add potato and egg mixture to middle of tortilla.
Pour hot sauce And salsa over mixture.
(If you would like, add sauteed onions, peppers and spinach. This is optional. Also if you eat meat, add in some sliced ham!)
Wrap tortilla up like a burrito.
Put wrapped burrito onto a pan on medium. About a minute per side.
Burrito is done. Enjoy!
Isn’t this recipe so easy? And so customizable. If you eat meat, add in bacon, ham or sausage. If you want more veggies, add in onion, peppers, mushrooms and spinach.
Vegan? Use tofu instead of egg, and vegan cheese! I actually originally planned to make this recipe using tofu instead of eggs, but I was out when I made it originally.
Next week I hope to make this with tofu! And since there is already turmeric in the recipe, that will make the eggs look more like scrambled egg than tofu.
Prepare to crave this often! It is such a delicious recipe.
