I am a millennial, so my love of avocado should be of no surprise to you. I love the color, the taste, the texture. I love to cut into an avocado and just sprinkle some salt on top and eat it. Not only is it delicious, but avocado’s are GOOD FOR YOU. Especially for women’s health.
Recently I have been switching up my weekend breakfasts.
I usually do either avocado toast, or scrambled eggs on toast.
But the other day Scott and I were having breakfast together and usually we have our eggs over easy, so we can dip our toast into the yolk.
The other day I made avocado toast, forgetting that I was making us eggs. So I did something. I put the fried eggs on top of the avocado toast.
I know I know.
Restaurants do this all the time with poached eggs.
So simple. Why am I having a moment with this?
Because! I never make myself poached eggs because I find it intimidating (I’ll get over it one day I’m sure). So this was my first time eating eggs and avocado together and I finally get it!
I finally get why restaurants serve avocado toast with eggs on top.
I highly doubt I’ll make myself poached eggs, but adding a fried egg on top? Yup, this is my new weekend breakfast!
I’m not going to post a proper recipe because this is honestly so easy. Just follow these super simple steps, and you’ll have an incredible weekend breakfast!
- Toast your toast
- Smash avocado and smear on top of toast
- Fry egg
- Add fried egg on top of avocado toast
- Sprinkle salt and pepper
- Add hot sauce if desired
Also, if you’re me you’ll add a tiny bit of ketchup, because I’m addicted and couldn’t resist 🙂
