I’m sure you’ve heard all of the hype. One pot dishes are the way to go these days. Instead of breaking out your slow cooker, there is an even EASIER way to cook a delicious meal. The one pot dish.
You can apparently make anything in just one pot. I haven’t been too experimental, but have spent plenty of time browsing one of my all time favorite sites, Pinterest, to check out tons of different recipes.
The other day I was all about looking up one pot pasta dishes. I am a pasta fanatic and if I had my way I’m pretty sure that I would eat pasta every day. I love how versatile it is, how filling each meal can be, how you can have very healthy pasta options, or just go all out carb loaded.
My favorite way to eat pasta is with a marinara sauce and either spaghetti noodles or penne noodles.
For this dish I had a box of spaghetti noodles just waiting to be used.
After reading so many recipes, I decided to use what I had read from several recipes and put it all together to make it my own vegetarian spin!
- 1 can of Aylmer diced tomatoes
- 2 cups of vegetable broth
- 1 tsp dried oregano
- 1 tsp dried parsley
- 1 tsp garlic power
- 1 tsp dried basil
- salt and pepper to taste
- 1 box of Catelli pasta
- 5 cups baby spinach
- Pour all ingredients together in a sauce pan with lid.
- Mix together.
- Turn heat up on high.
- Let mixture come to a boil.
- Once at a boil, remove lid and stir.
- Reduce heat to medium-high.
- Stir every few minutes so that pasta does not stick together.
- Let cook until pasta is tender.
- Remove from heat.
- Add in baby spinach and cover for ten minutes to allow the spinach to wilt.
- Mix once more and serve!
I wasn’t sure what to expect with my first one pot pasta dish, and I was worried that the pasta wouldn’t cook. But it did! And it turned out delicious! I garnished with some more parsley and a bit of cheese.
If I had fresh basil and parsley then I would have used those as opposed to dried, but dried works great as well.
Overall I give this dish a thumbs up and I cannot wait to make it again!
