Looking for a quick vegetarian quesadilla recipe? You’ve come to the right place! I love quesadillas and always have. I used to request having quesadillas for dinner on my birthdays growing up. Of course then it was filled with chicken, not veggies.
Now though, I stick to the veggies.
The cool thing about making your own quesadilla is that you can fill it with whatever your heart desires, and it will still be a quick, simple and delicious meal.
My favorite veggies to add? Zucchini and corn!
I can eat meals with tortillas every day. Tacos, fajitas, enchiladas, and quesadillas. There is something so comforting about meals like these.
Quick Vegetarian Quesadilla
A quick and delicious lunch, dinner or snack, vegetarian and SO easy to make.
You will want to eat this quesadilla for days. I know I have.
- 1 onion
- 1 bell pepper I used red
- 1/2 small zucchini
- 1/2 cup corn
- 1 tsp cumin
- 1 tsp paprika
- 1 tsp garlic powder
- 1 cup shredded cheese
- sour cream
- 1 tortilla
Preheat oven to 375.
Heat frying pan to medium high heat.
Add in diced onion, zucchini, bell pepper and corn.
Cook until soft and browned. About 7 minutes, stirring occasionally.
Add in cumin, paprika, and garlic powder. Coat veggies in spices.
Take tortilla. Cover bottom of half the tortilla with half the cup of cheese.
Fill half of the tortilla with the cooked veggies.
Add rest of the cheese on top of the veggies. Fold over the tortilla so the other half covers the cheese and veggies.
Cook in over for 5 minutes.
Broil in the oven for two minutes.
Plate and add on as much salsa, sour cream and guacamole as you desire.
Enjoy! But be careful, it's hot!
I think next time I make this I want to try adding in precooked and cubed sweet potato pieces. I think they would make a filling and delicious addition.
