It’s no secret that I love pasta. Spaghetti is my favorite meal in the world and if I had my way, I would eat pasta for every meal. Unfortunately that’s not healthy, so I do eat other meals.
The other day I came home from work and looked in the fridge. I noticed three ripe tomatoes that I had forgotten all about. Since I had some new spaghetti noodles to try out I decided to chop up the tomatoes and make a quick sauce while doing some household chores.
I usually make my homemade sauces from cans of diced tomatoes so I wasn’t totally sure how cutting up these tomatoes would work out.
This meal was so easy to throw together, and the perfect 30 minute weeknight meal.

This meal was ready in 30 minutes.
I usually prefer my homemade sauces to simmer for a few hours on the stove so that way all the flavors can mix together, but I was hungry and wasn’t prepared to wait a few hours for my dinner to be ready.
I was very impressed by how quick and easy this dish came together and I think you will be to!
If you try it out let me know what you think 🙂
