It is no secret that Sunday is my favorite day of the week. I’ve said it before and I’ll keep saying it. I love me a good Sunday. Just relaxing, going for walks, meal prepping, reading, catching up on TV and YouTube, and best of all? Good food! Every Sunday needs a good Sunday morning breakfast.
I like to stick the same things usually. This means that most morning I have oatmeal for breakfast. When Scott and I are off together we’ll have eggs, toast, hash browns, the works.
But when I have a Sunday morning I like something a little bit more special.
I like to have avocado toast, with eggs (over easy for that runny yolk) on top. A sprinkle of pink Himalayan salt, a dash of hot sauce, and a big slather of my favorite condiment in the world, ketchup.
My ketchup addiction is real. I’ve always been addicted to ketchup. Sometimes I’ll make a meal specifically because I’m craving ketchup and sadly, drinking it out of the bottle is not socially acceptable.
The past few Sunday’s I’ve been making my special Sunday morning breakfast. I never use a fork and knife. I pick that bad boy up and bite right in, letting the messy yolk drip onto the plate. I love pulling the crust off and dipping it into the runny yolk.
It is so delicious!
And easy. And simple. And why am I not eating it right this second?
This is a really filling breakfast so no extras are required, however, if you want to add hash browns then I say do it! Potatoes make every meal better 🙂
