We all have those foods that represent comfort to us. For me those foods are soup, spaghetti, and pizza. Not just any pizza though, sweet potato pizza.
I was in university when my room mate told me that one of her coworkers told her to try putting sweet potatoes on her pizza. We both looked at each other totally grossed out. Sweet potato on pizza? What?!
However, we both ended up trying it, and loving it.
I grew up not liking sweet potatoes, and would wrinkle my nose when people ate them in front of me. They looked disgusting to me. How wrong I was.
The way to put sweet potato on your pizza is simple.
Preheat the oven to 450 degrees Fahrenheit, which equals 230 degrees Celsius.
While the oven is preheating, cut up your sweet potato. This can be done however you like it, but I prefer cutting it up into equal sized chunks.
Cover with olive oil and sprinkle on some salt and pepper.
Do the same with any other veggies. I usually do red onion, broccoli and red pepper.
Once oven is heated put all veggies onto a pan and cook for 25 minutes, flipping every 10 minutes.
While veggies are cooking put your sauce and herbs and spices onto your crust.
Once the veggies are all cooked put on top of pizza. For this dinner I chose to have my pizzas mini on a pita, but you could use a pre-made crust, or make your own home made crust.
Add your cheese.
Put pizzas into oven at 450 for 5 minutes, then broil for 5 minutes to melt the cheese.
I know putting sweet potato on your pizza may sound gross, but it is AMAZING!
