I have always loved vegetables. When other kids would tell me that they hated broccoli I would stare in shock. Hate broccoli? HOW?! Now as an adult vegetarian I love trying out new recipes with as many veggies as I can fit in. When I’m not trying out new recipes though, I go back to my old favorites. Something that I love to make once a week is a huge pan of roasted veggies.
Roasted veggies are perfect as either a side dish or as a whole meal.
Often times I make enough vegetables on the pan for a plate and that’s my dinner! I feel great after eating it, I don’t feel sluggish or tired, and it is so yummy 🙂
There are so many different vegetables that you can roast, which is awesome. It is such an easy and diverse recipe. Whatever veggies you have in the house, just throw that on the pan!
I have my favorites.
Broccoli, zucchini, potatoes, carrots, red peppers, asparagus. All so good.
Seriously, until I roasted carrots I never knew just how delicious they were! Now I can’t make roasted veggies without a few carrots on the pan. They are my favorite roasted vegetable.
- 1 cup broccoli
- 3 carrots
- 1/2 cup zucchini
- 1 red potato
Pre-heat oven to 450 F.
Cut potato into bite sized chunks.
Put potato into a bowl. Drizzle with olive oil.
Add whatever herbs and spices you wish. I used garlic powder, salt, parsley and cumin.
Pour potatoes onto a pan.
Put in oven and cook for 10 minutes.
While potatoes are cooking cut up broccoli and carrots.
Repeat steps 3 & 4 with broccoli and carrots.
After 10 minutes take out potatoes. Flip. Add broccoli and carrots to the pan.
While those cook slice zucchini.
Add zucchini to bowl. No need to add herbs, spices or oil as the bowl will still have enough left to coat the zucchini.
After 10 minutes take out veggies and flip. Add zucchini to pan.
Let cook for 10 minutes. If you wish you can flip zucchini halfway through. Take out veggies.
This is such a quick and easy dinner or side dish.
After the veggies cook I add ketchup and mayo to the potatoes. For the veggies I add a little soya sauce and sesame seeds. Sprinkle salt all over if desired.
This was my first time cooking with cumin and I must say, I’m addicted. It is SO good!
