I love a good veggie sandwich. In fact, I dedicated an entire blog post recipe to one. So it should be no surprise that I’m wanting to share another one with you. This one only has five ingredients and can be made as quickly as your toaster can toast your bread. As far as I’m concerned, this is the simplest sandwich that you can make!
This past week I wasn’t sure what I wanted to bring for my lunch one day. I had meal prepped some chili but there wasn’t enough for my last day of work. I looked through my fridge and saw cucumber and carrots. Two of my favorites fridge staples!
I wasn’t too sure how a sandwich of only carrot and cucumber would taste but I thought “Why not?” and gave it a try.
The verdict? Delicious 🙂
The Simplest Sandwich
- 2 pieces bread
- 1 shredded carrot
- 1/4 sliced cucumber
- 1 tbsp mayo
- 1 splash Italian dressing
Toast two pieces of bread
While bread is toasting, slice 1/4 cucumber and shred a carrot
Once bread is toasted, spread mayo on one slice
Add cucumber, then shredded carrot
Add a splash of Italian dressing on top
Close sandwich, cut, and eat!
Like I said before, simple!
It’s almost too easy, isn’t it, to be a good meal. You would think something that only takes three or four minutes to make must not be that good, but I actually really liked this sandwich.
I liked this sandwich so much in fact that I made it for dinner again that night!
This sandwich may not have the most ingredients, but for a quick look through my fridge to see what I had in there, I think it turned out pretty good.
