I have recently switched up my diet and am now a vegetarian.
The reason being is several doctors have suggested trying a vegan diet to see if that helps with my stomach issues at all. But honestly, I felt that switching to a vegan diet overnight was just not going to happen, whereas a vegetarian diet was something that I felt was a much easier transition.
I have never liked the idea of where our meat comes from.
Please know that this is not a preachy post on how you should all become vegetarian.
It’s not that.
My boyfriend is still a meat eater and I’m more than cool with that!
I just felt that after several doctors have suggested eliminating meat from my diet that maybe I should try it out.
I come from a family that eats a lot of meat. Fine for them. But I personally have never liked eating that much meat.
Eating a lot of meat has always made me feel sluggish, and when I think about what the meat industry does to the animals and the environment, switching to vegetarian was such an easy choice.
Maybe one day I will be vegan, maybe one day I won’t. Who knows, I guess we’ll just have to see.
Since I am now vegetarian I realised I had the perfect excuse to try out some new recipes!

How amazing do these zucchini tater tots look?!?
I am a huge fan of tater tots, and I am also a HUGE fan of zucchini, so I imagine that these would be the perfect snack or side dish.
They look so cute and delicious, I wish I had some zucchini right now to make these now.
Not sure about you, but I am hungry just from looking at this picture.
A white bean and avocado burrito sounds like an amazing dinner!
I love burritos, SO MUCH! We have a Mucho Burrito near us and I love their veggie burritos, but making my own would be so much healthier and this picture definitely makes me think it would be much more delicious.
This is something I will definitely be making when I am home for a dinner time.
This grilled zucchini hummus wrap looks divine, doesn’t it?
It looks like it would make a great lunch, or chilled out dinner. Oh, maybe paired with the zucchini tater tots up above it would be a great pairing!
My wraps never look as great as the wraps in the pictures, but I think it is worth a try!
Oh hello meal from heaven.
I love pasta.
It has always been and will always be my favourite meal.
There is nothing more comforting and delicious than a big bowl of pasta, and as a huge fan of roasted red peppers, this red pepper fettuccine looks like it would be everything that I want in a pasta dish.
I don’t know what it is, but I adore butternut squash, and I never thought to make a lasagna with it.
I love both eggplant lasagna and zucchini lasagna, so I’m sure I would love this as well!!
So there we go!
I’m sure I’ll do another one of these posts sometime soon, but first I want to start out with trying out these recipes.
