I feel like this post is a bit of a cop out. Like, it’s such an easy post to write is it even worth it? But then I thought to myself, I bloody love reading What I Eat In A Day posts, and watching these videos on YouTube, so here I am with my own!
Just because a post is easy to write does not mean that it shouldn’t be written. Maybe no one is interested in what I eat in a day but that’s okay with me, because I know I will enjoy taking photos and writing this. One of my favorite WIAW bloggers is Heather from Polyglotjot blog, and now that she has a little one she includes her daughter’s eats as well. They are so fun to read!
I ate these eats on a Sunday, so they were more relaxed than if I had to pack my meals to go to work.
Quick. Simple. Delicious. Filling.
I toasted Silverhills bread with smashed avocado on top. I then added a fried egg to each slice with hot sauce and ketchup.
You can see why it was so filling! This used to be one of my go to breakfasts, but lately I’ve been eating a variety of different breakfast foods. Now that it’s fall time I can expect myself to start making my favorite again, baked oatmeal.
I just threw together this salad at random. Whatever was in the fridge was going to work. This salad had spinach leaves, shredded carrot, diced red onion, cucumber, chopped up Gardein crispy tenders and ranch dressing.
Seriously, so good. There is something about those Gardein crispy tenders that just get me. After not having them for nearly a month I can say, distance did make my heart grow fonder. They were divine in this salad. And yes, I am talking about a simple vegan chick’n tender I put in the oven for 20 minutes. Nothing special.
A self proclaimed coffee addict, I had two cups of coffee on Sunday. One in the morning and one in the late afternoon. Typical for me.
Dinner was supposed to be my all time favorite meal, spaghetti. Somehow though, we ended up ordering fried rice from a Chinese place nearby. The thing with Vancouver is that there aren’t really any “Westernized” Chinese food places around here, but recently we discovered a place close by that does pretty decent fried rice.
Veggie Fried Rice for the win. And lots of leftovers 🙂
Un-pictured, but those thin pretzels. I can only buy them so often because it is so hard to put them away. They are so addicting!
