Vegetarian Quesadilla

A quick and delicious lunch, dinner or snack, vegetarian and SO easy to make. 
You will want to eat this quesadilla for days. I know I have.


  • 1 onion
  • 1 bell pepper I used red
  • 1/2 small zucchini
  • 1/2 cup corn
  • 1 tsp cumin
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1 cup shredded cheese
  • salsa
  • sour cream
  • guacamole
  • 1 tortilla


  1. Preheat oven to 375. 

  2. Heat frying pan to medium high heat.

  3. Add in diced onion, zucchini, bell pepper and corn.

  4. Cook until soft and browned. About 7 minutes, stirring occasionally.

  5. Add in cumin, paprika, and garlic powder. Coat veggies in spices.

  6. Take tortilla. Cover bottom of half the tortilla with half the cup of cheese. 

  7. Fill half of the tortilla with the cooked veggies.

  8. Add rest of the cheese on top of the veggies. Fold over the tortilla so the other half covers the cheese and veggies.

  9. Cook in over for 5 minutes.

  10. Broil in the oven for two minutes.

  11. Plate and add on as much salsa, sour cream and guacamole as you desire.

  12. Enjoy! But be careful, it's hot!
