Herb Roasted Potatoes

The perfect breakfast food or side dish to any meal, these potatoes are healthy, filling and delicious.

  • 1 1/2 cup Potatoes Any potatoes are great, for this recipe I used baby white potatoes
  • 1 TBSP Olive Oil
  • 1 TBSP Garlic powder
  • 2 TSP Dried Parsley Flakes
  • 1 TSP Rosemary (Dried or fresh)
  • 1 TSP Thyme
  • 1 TSP Oregano
  • 1 TSP Basil


  1. Preheat oven to 430 F.

  2. Scrub potatoes clean. Once clean dice them to bite sized pieces. For the baby potatoes this usually means just slicing them in half.

  3. Once cut, add potatoes to a mixing bowl. Drizzle olive oil over the potatoes and mix well.

  4. Add all other ingredients to mixing bowl and coat potatoes evenly.

  5. Put evenly coated potatoes onto a baking sheet and put in oven once preheated.

  6. Cook in oven for 25-30 minutes, flipping once halfway through.

  7. Once potatoes are cooked (find out by poking a fork through the biggest potatoes), add salt and pepper to taste.

  8. Enjoy your delicious breakfast or side dish!
