Veggie Breakfast Burrito

A filling and delicious breakfast. 

Servings 1 burrito

Ingredients

  • 1 Whole Wheat Tortilla
  • 2 Eggs
  • 5 Mini Potatoes I always buy the tricolor mini potatoes
  • 1 ounce Cheese
  • 1 Tsp Turmeric
  • 1 Tbsp Salsa
  • Hot Sauce To Taste I use Frank's Red
  • Salt and Pepper to Taste

Instructions

  1. Cut up mini potatoes into small bite size pieces (these pieces will be going into your wrap, so make them tiny).

  2. Boil potatoes until fork tender.

  3. Once boiled, melt butter into a pan. Cook potatoes on medium in pan until crispy. 

  4. Add in turmeric to potatoes. 

  5. Crack eggs into a bowl. Whisk, them pour egg mixture into potato pan. Cook together until eggs are scrambled and cooked with potatoes. 

  6. Salt and pepper eggs and potatoes to taste.

  7. In another large pan on medium, warm tortilla. About 30 seconds per side. 

  8. Put tortilla on plate. Sprinkle cheese all over the tortilla.

  9. Add potato and egg mixture to middle of tortilla.

  10. Pour hot sauce And salsa over mixture.

  11. (If you would like, add sauteed onions, peppers and spinach. This is optional. Also if you eat meat, add in some sliced ham!)

  12. Wrap tortilla up like a burrito.

  13. Put wrapped burrito onto a pan on medium. About a minute per side.

  14. Burrito is done. Enjoy!
